Chocolate Coconut Macaroons

By far, the easiest baked good ever and only 4 ingredients!

If you have unexpected guests coming or need to send something for a school bake day for your children - make these! they literally take 30mins. 


225g coconut threads
100g coconut sugar  - you can use caster sugar
2 eggs, lightly whisked
Dark chocolate for dipping

Preheat oven to 130C Fan bake. 
In a bowl, combine coconut threads, sugar and whisked eggs. 
Mix to combine.
Leave mixture aside for 10-15mins. 
Using a dessert, soup spoon or ice cream scoop, pack the spoon with mixture and turn out on the tray. 

Bake these little morsels for 7 mins or until golden. 

Allow to cool. 

Meanwhile, Melt some good quality chocolate in a Bain Marie - bowl over a pot of water on the stove 

Once macaroons are cooled, dip the bottoms into the chocolate and lay on some baking paper to set.
