Spinach and Feta stuffed chicken

Ingredients

4 chicken breast
1/2 block feta cheese
Handful baby spinach 
Handful cashew nuts
1/2 teaspoon dried chilli flakes
Salt and pep
Drizzle olive oil
500g streaky bacon

Method
Put a medium pot of water on heat and bring to a boil
In a food processor or Nutri bullet place feta, baby spinach, cashews, chilli flakes, salt and pep and olive oil.
Blits to a chunky paste texture.
Using a knife, make a cut in the thicker part of the breast, slicing into the breast to make a pocket.
Fill the pocket with spinach and feta mix.
Lay glad wrap down onto a clean bench followed by 2 slices of streaky bacon.
Wrap bacon around chicken breast.
Roll wrapped chicken in glad wrap tightly, twisting ends securely. 
Turn heat down of pot so the water is at a gentle simmer.
Carefully place chicken into the water and allow to poach for 30 - 35mins depending on the size of the breasts.
Once chicken is cooked remove glad wrap.
In a hot pan with a little oil, pan fry chicken breast to brown and crisp up the bacon.
Slice chicken to serve.
Serve with a fresh salad or on top of a creamy pasta dish.
