Chocolate Oaty Biscuits

Ingredients

125g butter, soften
1/2 c brown sugar
1/2 c white sugar
1 tbsp vanilla 
1 egg
1 c rolled oats
1/4 c buckinis (optional - add a yummy crunch to your bickies)
1 c plain flour
1 tsp baking powder
1/2 c dark chocolate

Method

Set oven to 180 - Bake
Beat butter, sugars and vanilla until pale
Add egg, mix to incorporate
Add all of the dry ingredients
Mix to combine
Allow mixture to chill and harden in fridge (this helps hold the cookies in shape so they don't spread.)
Roll dough into balls and place on a lined flat baking tray
Lightly flatten balls with fingers 
Place in oven and bake for 25-30 mins or until golden 
Remove from oven and allow to cool.


Note: You can swap out the chocolate chips for raisins which also works well. 

They hold well in an airtight container for about 4-5days... if they last that long. :)
