These nibbles are a a favourite in a crowd. Perfect for entertaining and dinner party finger food.
What is a Crostini? It is essentially a small piece of bread, toasted or fried, served with a topping as a canapé or starter.
Ingredients
- 1 french bread stick
- 1 packet baby heirloom tomatoes
- 1 slab feta cheese
- 3 Tbsp ricotta cheese
- fresh herbs
- pepper and salt
- olive oil
Method
Thinly slice the bread stick and lay out on a baking tray.
Drizzle bread with a little olive oil and salt.
Toast in the oven on 150C for 8-10mins or until crisp. - leave aside.
On another tray, lay tomatoes down with a generous drizzle of olive oil, pepper and salt.
Using the hot oven, slow roast on 140C for 15-20 mins or until blistered. - leave aside to cool.
In a food processor, place - feta, herbs, pepper and salt and a drizzle of olive oil. Blend until smooth and creamy.
Assembly:
Using a butter knife, scrape some feta creme onto the crostini leaving a slight indent, place a roasted tomato on top sitting it in the indent so it doesn't slide off the crostini.
Serve.
I have also garnished with wild rocket or fresh basil which adds a pop of colour.
