I gave into panic buying!
As we are all aware our world is enduring some horrific times at the moment with Covid-19 on the rampage sending everyone into a spiral of panic buying and stock piling toilet rolls for the only reason I can think of is to tipee the neighbours house when boredom in Iso sets in for 4 weeks... Yes, times are tough and definitely a tad scary to think when will this ever end but strangely entering into this lock down period I was calm, cool and collected. . Which considering what is going on is very odd behaviour for me - maybe change isn't a big deal for me these days.. in saying that did I mention that the week before the world shut down I moved my life from wee little Thames to the mighty Hawkes Bay.. yes that happened. I had only just started an amazing job as a cookery tutor, met and taught an amazing group of people for one week and boom!! - Lockdown- . Luckily I have such a supportive team of co workers who have shown such kindness and generosity over this time.
Anyway, back to my point.. I jumped into this lockdown like a chilled cucumber... at first anyway... I then decided to go to the supermarket to get a couple of items just to get me through as we are all told to shop normally... I drove into the Pak n save car park and it was packed!. Now, I could be the only one who does this but as soon as I drove into that carpark I picked up the "stress vibe" instantly.. found an exit and got out of there.
So I thought.. ok Jodi.. the supermarket isn't your friend today, what next. Found a dairy... got the little essentials I needed like bread, milk ect.. next up.. Asian grocer.... stocked up on noodles, rice, pastes, oils, sauces and of course dumpling wrappers. Last up vegetables .. I drove 10 mins out to a veggie shop to which I was asked to sign in, wash my hands and stand in line exactly 2 metres away from the other shoppers.. ok, cool I get it, safety first.. but at this point, stress levels are high and I am regretfully getting to a space where I am about to jump on the bandwagon of... PANIC BUYING. . yes... I did it... went in for 3 things walked out with 10..
Well, you know what they say... when life gives you veggies.... make soup!
One pot Chicken and Vegetable Noodle Soup
This is my "I gave into covid panic buying, bought too many veggies so threw them into a pot with water, a chicken frame, vermicelli noodles and made a soup, Soup".
Best part about this recipe is that you chuck it all into a crock pot, turn it on and walk away.
I wanted a nice clear broth, packed with mushy veg, chicken and vermicelli noodles - this soup delivers exactly that and is super nutritious to fight off any bad bugs.
- 3 carrots
- 2 potatoes
- 1 brown onion
- 2 cloves garlic
- 2 celery stalks
- 3 stems silver beet
- 1 chicken frame
- salt and pep
- 1/2 packet vermicelli noodles
Chop all veggies into chunks
Put everything into the crockpot except the vermicelli noodles.
Cover with water
Turn crock pot on high for 1-2 hours.
Add vermicelli noodles near the end.
