Simple Prawn Fried Rice

Use up last nights rice

I don't know about you but Chinese fried rice is one of my favs. Nothing beats the number 13 - combination fried rice from Golden Dragon but will I give it a run for its money? hell yes!

This recipe is so easy to make and uses minimal ingredients. 

Use up last nights leftover rice, defrost some prawns, throw in some frozen peas, a whisked egg and sliced spring onion and you are onto a winner!

Why use cold / old rice? 
Using cold rice rather than fresh is "the secret" to a good fried rice. The cold rice hits the hot pan, frys and holds its grain rather than if you used fresh warm rice it will soak up the oil, and almost stew and break down.

Note: You could also add leftover meat from dinner or leave the protein out and just have a basic egg fried rice. YUM!

Prawn Fried Rice


  • 2 C cooked rice
  • 15 prawns - fresh or defrosted
  • 2 spring onions thinly sliced
  • 1/2 C frozen peas defrosted
  • 2 eggs whisked
  • 1 Tbsp vegetable oil
  • 1 Tbsp sesame oil
  • 2 Tbsp light soy 


Heat vegetable oil in a pan or wok.

Add the white part of the spring onions and prawns.

Add rice and peas, stir fry for a minute or two.

Move rice to the side of the pan or make a well in the middle and add whisked eggs.

Leave egg to cook slightly, stir fry further to break up egg through rice.

Finally add sesame oil and soy sauce. Toss. 

Adjust seasoning.

Top with green spring onion.
