Who loves coconut? who loves chocolate? who loves chocolate and coconut together?? I DO!
This recipe is a childhood favourite. Adding nuts to the base or icing gives it a yummy nutty crunch. It is a super easy and straight forward recipe that requires minimal effort and dishes so win win. Just like my cookie recipe this is one fished out of nana's freezer. A classic morning tea or lunchtime treat. On that note this recipe freezes well for up to 3 weeks- tried and tested by my lovely nana.
Chocolate Coconut Slice
- 1 1/2 cups self raising flour
- 1 cup white sugar
- 1 1/2 cups desiccated coconut
- 3 Tbsp cocoa
- 200g butter, melted
- 2 cups icing sugar
- 2 Tbsp dark cocoa
- 50g softened butter
- 1 1/2 Tbsp boiling water
- 2 Tbsp desiccated coconut
- walnuts, sliced almonds, optional
Preheat oven to 180°C.
Spray a 20 x 30 cm baking tin with oil and line with baking paper
Mix all the base ingredients in a large bowl, Press into the baking tin and bake for 20 minutes.
Cool on the bench in the tin while you make the Icing,
To make the icing, In a bowl place icing sugar, cocoa, butter and hot water. Mix until icing is smooth and free of lumpy bits.
Spread icing over cooled base.
Sprinkle the top with the coconut and allow to sit a little before cutting.
Note: I have also topped this recipe with sliced almonds or walnut pieces. So yummy.
Also, If your like me and want an extra thick layer of icing double the icing recipe.
Cut as big or as smaller pieces as you like. This recipe would be a hit to take to Nana's house for morning tea with a cuppa or ideal for a sweet treat in the lunch box.
