This salad is super fresh, colourful and nutritious. With Moroccan flavours you will be in love. You could pair it up with some grilled chicken or seafood or have it on its own. Are you on salad duty for a dinner party but don't want to make a normal green salad? make this bad boy! it will be sure to impress the socks off anyone!
Spiced Quinoa and Chickpea Salad
- 1 C quinoa
- 2 C vegetable stock or water
- 1 tin chickpeas drained
- 1 brown onion diced
- 2 cloves garlic crushed
- 2 Tbsp ground cumin
- 1 tsp ground cinnamon
- dash of olive oil
- 1 carrot finely sliced
- 2 handfuls of rocket
- lemon zest
- salt and pep
Optional toppings: pistachios, pomegranate seeds, chopped dates, avocado, sprouts.
Using a pot, cook the quinoa like you would rice with the absorption method using the stock. Once cooked, separate with a folk and allow to completely cool.
In a pan with a little oil, fry off the onion and garlic until soft.
Add spices and drained chickpeas, fry until the spices have evenly covered the chickpeas and you have a nice dry mixture. put aside to cool.
Place all ingredients in a bowl and gently toss with a little olive oil, lemon zest, salt & pep.
Serve in a large bowl and top with whatever toppings tickle your fancy.
