A classic baked good!
Who doesn't love a good Choc chip cookie? Such a classic recipe that is always enjoyable with a cuppa tea, or a little treat in the kids lunch box.
I remember waking up on a Sunday at Nana's, putting on an old tatty apron that she wore when she was a kid, pushing the foot stool up to the kitchen bench to stand on, where she had all the ingredients ready to bake chocolate chip cookies. Was i overly helpful with beating the butter and sugar and mixing the ingredients... maybe not.. was i helpful with eating the cookie dough and cleaning the bowl.. Of course!!
My Nana is all about freezing her baking. Chocolate chip cookies - freezer, Coconut slice - freezer, Cheese Scones - freezer, Cheese scones with curried mashed egg - freezer. She is the freezer Queen! If you pop in for an impromptu visit, no doubt you will be welcomed with frozen Parsley and Cheese scones re heated in her bench oven and a square of defrosted caramel slice with a cuppa. Even though we baked cookies regularly on a Sunday I still to this day only recall eating cookies that were fished out of the freezer and 1/2 defrosted from the last batch we cooked. Look, I'm not judging, there is nothing wrong with freezing food, I am all about that freezer life.. As long as its packaged correctly preventing freezer burn then hell yeah! i'll eat that 2 month old defrosted cookie!
On that note, the recipe below is definitely freezable but in my household they never get as far as the baking tray.
These cookies are a little chewy but also light and perfect for a morning tea snack.
$ Cost wise: Cheap. - The only costly ingredient is butter. Otherwise all ingredients are Pantry staples!

Below - Uncooked cookies ready for the oven. Only press slightly with fingers as they do spread a little in the oven.
Chocolate Chip Cookies
- 125g butter
- 1/2 C brown sugar
- 1/2 C caster sugar
- 1/2 tsp vanilla
- 1 egg
- 1 3/4 C self-raising flour
- 1/2 tsp salt
- 1 C chocolate chips or chunks of chocolate
You could add nuts if you like or swap out chocolate chips for m&ms for a pop of colour.
Preheat oven to 180C conventional or 160C fan forced and line two trays with baking paper.
In a medium sized bowl, beat the butter and both sugars until creamy and light, add egg and vanilla, beat into the butter mixture until combined.
Sift flour then add salt and chocolate chips into the butter mixture and mix until a buttery dough forms.
Roll cookies into little balls and flatten slightly with your fingers or a folk.
Bake for approx 15mins or until golden.
Cool cookies on a cooling rack or be like me and eat them while they are piping hot when the chocolate is all gooey!
