Mushroom, Spinach and Feta Bruschetta

A crowd pleaser!

I made these delicious morsels for a work function recently and well.. they were a hit to say the least. Cheap ingredients that create a complete crowd pleaser - Wether for a Morning Tea, Shared lunch or dinner party, these Vegetarian delights will have your guests coming back for more. 


  • ciabatta bread
  • 15 button mushrooms
  • 1 pkt feta cheese, crumble (put some aside to finish)
  • 1 bag baby spinach
  • olive oil
  • grated cheese  (preferably mozzarella or Parmesan)
  • salt and pep


Slice Ciabatta and place on an oven tray.

In a bowl throw sliced Mushrooms, crumbled Feta cheese, a couple handfuls of baby spinach, grated cheese, a drizzle of olive oil and salt and pep. 

 Pile mixture onto bread - don't be shy with the amount you pile it on as it cooks down.

Throw in the oven and bake on fan bake @ 120 for 10 mins or until bread starts to golden up. 

Remove from oven and set aside to cool. 

Notes: To finish off, crumble the last of the Feta cheese and drizzle with Balsamic Reduction. - to be extra fancy sprinkle with broccoli sprouts.
