Chickpea Falafel

Chickpea Falafel are so easy, versatile and packed to the brim with Middle Eastern flavours. I make these little morsels if I'm stuck for a dish to take to a dinner. The ingredients are such pantry staples and very accessible. This dish is simple, easy to throw together and pleases vegetarians and the meat eaters at the table. $ Cost Wise: Cheap - We are talking cheap cheap! A tin of chickpeas cost around $1.79, the rest are all spices and pantry and garden items. ...

Vegetable Spring Rolls

Chinese food was always a go to when we had takeaways in my household. On the odd occasion it was a Saturday night treat. Mum would take us down to New Saigon, the local Chinese smorgasbord restaurant and we would pile our containers high until you couldn't close the lid. The options were endless.. Sweet and Sour pork, Combination Fried rice, Egg Foo Young and one of my favourites.. Spring rolls!  When I think of fried spring rolls I think deliciously sautéed vegetables encased in a crispy...

Lamb Neck Chop Casserole

Do you have those certain smells that remind you of home? Those smells that bring back childhood memories and remind you of the good ol days? Of course mine are always food orientated, and this is one of them.  This dish is one that i still hassle my mum to this day about cooking me. Growing up she would make  this for dinner on a Sunday night served with mash potatoes and steamed green beans. She would make this recipe with either Lamb neck chops or shoulder chops - which ever were ch...

Prawn Rice paper Rolls

Rice paper rolls are one of my favourites. I make these probably once or twice a week but usually change it up and swap out the prawns for chicken, come summer time I pack them with Avocado because 1 Avo is a healthy fat that is good for your body and diet and 2 because they are gold in vegetable form!  When making this recipe you have so much freedom to mix it up and add the veggies you like. You could even add vermicelli noodles. If my recipe says shredded cabbage you could substitute for...

Banana Loaf

Sunday always seems to be a day where I find inspiration to pick up a whisk and bake.... and this Sunday I did just that. Not only to use up some old brown bananas but also because I was feening for coffee and cake.  Watching the Bananas in my fruit bowl looking terribly sad I decided to make a Banana loaf. Great Jodi, you made a decision! Banana Loaf! .. But not just any banana loaf of course.. while cleaning out the freezer I came across a next to empty bag of Raspberries.. so in they go....

Brownies in a Jar

So, I am a Christmas lover! Favourite time of the year. and YES, i am one of those crazy people that makes their gifts by hand for my friends and family. Why you may ask? because i think its sentimental and precious getting something handmade and you save a lot of coin.  You know what makes my hand made gifts the best? they are always FOOD related, never mind Soap and Hand Cream I've made hand made dressed ginger bread men, Assorted chocolate bark, my very own nutty Dukkah mix, home made ch...

Balinese Peanut Satay

When i visited Bali earlier in the year i learnt how to make this exact recipe by a gorgeous family at a cooking class in Ubud. And oh my giddy aunt it is delicious! Peanut Satay is again, one of my favourites. This sauce is one that i would bathe in with Roti in one hand a chicken kebab in the other.  When you do make this recipe, which i know you will because lets face it.. who doesn't love Satay? Please listen to the recipe when it says use a "sweet chili". Do not do what i did and ...

Jodi: "HOT please".  I would have to say that this is one of my 'go to' dishes at my local Thai restaurant. Nothing beats it, throw in a Roti and I am done!..  My Green curry is so fresh, spicy and packed full of veggies. Of course hot and spicy is not on everyones pallet so you can manage the spice yourself and make it the way you want it! Follow my recipe and ...

Couscous Stuffed Squid

Squid is one of my favourite Seafood's and I think it gets misjudged. People have said to me, 'Why would you eat Bait?' . Well, fishermen of the Coromandel, I am going to prove you wrong! Now, obviously I'm not saying use your left over bait from Saturday mornings fishing trip.. buy some specifically from any fresh fish shop or supermarket. I was lucky enough to get mine from one of my favourite places in Auckland-  The Fish Market in Wynyard Quarter. - If you have never been i suggest you ...

This Pesto is the Besto !

For a long time I believed that Basil Pesto was over priced and pretty much over rated. How could they charge $8.00 for a 200g tub of Pesto?? I never understood it.. until I looked into the ingredients behind a traditional Basil Pesto. Basil- Expensive unless in season. Garlic - NZ grown garlic is on the pricey side, Parmesan Cheese- Like all cheeses you pay for quality not quantity. Olive Oil- essentially the pure extract of Olives... you think that would be cheap? and Lastly, Pine Nuts.. now I...
